Fresh "Patali Gur" Or Nolen Gur slabs of Jaggery is harvested in winter. Favoured for its rich caramel and smoky notes it's produced only in a limited landscape washed by the saline tides of the sea and the rich alluvial gangetic plains.
Khejur Patali Gur, or date-palm jaggery, is essentially the set and solid form of the beloved liquid Nolen Gur. The process begins with collecting the sweet sap from date-palm trees, which is then slowly simmered down into a thick, velvety concentrate. This rich reduction is finally allowed to firm up into small blocks of Patali Gur — the very winter delight we eagerly wait for every year
